This Festive Bikini – The Method

WThis is a simplified interpretation of a cocktail from a new cocktail list. It's a large-volume premix that is loaded with flavours of the festive period, making it perfect for hosting a celebration. Save the extra syrup you can use for brunch beverages, sweets, or for another batch of the drink.

Bikini

Serves 10 people

For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Citrus Syrup: Put the listed items inside a pot, bring to a simmer, stirring until the sugar dissolves. Next, turn off the heat and leave to reach room temperature entirely. Pour into a clean bottle, cap it and store in the refrigerator, it can be stored for around four weeks.

For the Cocktail Base: Combine every spirits and syrup in a sizeable container, allow it to infuse for one hour, then pass it through best through a fine cloth, making it completely strained.

To serve: Pour 85ml of your premix into a cocktail shaker packed with ice, and agitate carefully for one minute to cool it down. Strain to a frosted cocktail glass or a similar vessel, top with a few cranberries and finish using a light spray with the mandarin essence above the glass.
